Nicole Johnson was born circa 1974. She was the winner of the 1999 Miss America pageant, and is now a diabetes advocate. She was diagnosed with type 1 diabetes in 1993.

She is a 1998 graduate of the School of Communication & the Arts of Regent University in Virginia founded by the televangelist Pat Robertson. Nicole also has a Master of Public Health 2007 degree from the University of Pittsburgh. Her undergraduate work was done at the University of South Florida where she obtained a BA in English. Nicole became the anchor of dLifeTV Dlife, a weekly series about diabetes that airs on CNBC, in March 2005. Nicole has written four books—three cookbooks with Mr. Food and her autobiography Living with Diabetes. She works full time as a diabetes advocate and patient care expert. Her clients include Animas Corporation, Diabetes Centers of America and Eli Lilly & Company. She lives in Florida with her daughter.
